I believe there is only one email you can use on your Airbnb account, but of course you can set up your email so that it automatically defaults to other emails when you are out of the office or of course the easiest solution is for you to set up a generic booking email which all your staff can access.
You can also ask your channel manager if they have additional functionality for additional emails.
