We love Instant Book, and we love hosting people from different walks of life, however, from our hosting experience and my wife's past personal experience, there is a nationality that we prefer not to accept as guests due to their personal habits. It is not important which nationality this is, we're not racist and I won't be drawn into this further.
I believe that this is not possible after speaking with Airbnb support, however, I want to know if anyone else would benefit from a new feature to be able to list up to 3 nationalities that can't instantly book but of course can request a booking with a message. Please don't mention nationalities as this is not about racism, just a useful new feature to be more selective.
Without escalating the discussion which you seem to want to avoid, purely in a legal standpoint this would be illegal in many jurisdictions . Including Australia. And I guarantee AirBnb would not want to add this functionality
