We are currently travelling in Italy and most of our places state that there is access to Netflix but there is no home account. Is “access to Netflix “ on Airbnb a euphemism that means you need to sign in to your own account?

There are two aspects to this question, and to make it simple: both reasons are NO.
First, it is actually against Netflix’s terms and conditions to share your personal account on an Airbnb property.
Second, in my opinion, the amenity really just means that the TV supports streaming apps. Some older TVs do not have this option at all.
Guests should use their own login to access the app, and I do not think this is something hosts are expected to provide for free.
It is similar to how hosts provide access to Wi-Fi, but guests need to bring their own phone or device to use it.
It is similar to how I provide guests with a parking space, but that does not mean I also give them my car.
