See the Airbnb Help Article Link I posted above....it has a section on blocking and unblocking dates.

Depends on whether you are using your phone or on a laptop/desktop. Basically you tap a date and it turns black. On a laptop to the right panel you'll see a choice to block dates. When a date is blocked it is greyed out with a line through it.
