I want to block future dates as I'll be on vacation. However, because that period of time is outside my 6 month window, I can't seem to do this. What is the process to make this happen?

You can block dates beyond your availability window if you turn on professional hosting tools
In the listingcalender you need to select those dates and then make them available.
After that you need to make them unavailable again.
Then the availability window should not open those dates again.
Unfortunately dates in the listing calender will not show if they are blocked by the availabiity window or by a manual block. But if you select them, it will show why they are blocked !
In the multicalender (professional tools needed) manual blocked dates will show as "diagonally striked through" . It gives a host visually much better info about the calender, so recommended.
