Is it possible to have a night open but it not be the start date

My place is in person check in only. I can not be home on Wednesdays to welcome and check in a new guest on Wednesdays. It is fine if the check in early and Wednesday's are part of the booking or the end date.

I can only see options to have Wednesday's open or blocked. Is it possible to set it as open but not a start day?

Yes @Darren523 

Go to Calendar, Availability.

Scroll to "More availability settings". This gives you the option to block Wednesdays for check-in:
