How do I turn off instant booking? I think there should be a "reservation request" but I don't seem to see it.

If your listing isn't one of the ones Airbnb set Instant Book on, you can turn it off in two ways:
1. Next to Calendar and More click on the lightening bolt. It should turn grey once disabled.
2. In your Manage Listing drop down menu, click on Booking where you will see choices under Who Can Book Instantly. Select No One....

@Jacqueline34 some new listings have been selected by Airbnb to have Instant Book by default and the hosts are not able to remove it. If your listing is not one of these, go to Manage Listing and to the right of Calendar and More and Preview, you will see a lightening bolt. Click on it to disable. If you are successful, the lightening bolt will turn grey.
Another way to disable IB is to go to the menu to edit your listing and select Booking. In that section you will see "Who can book instantly". Select "no one...."

I just set up my account and am not able to deactivate instant booking. Can I request that Air BNB deselect my house for instant booking by default. I only want to rent my house out for filming and want to make sure I can communicate with guests before they book.

@Karen151 You can try contacting Airbnb to see if they would deactivate IB but I would be careful since you are not accommodating guests and possibly could be violating their Terms of Service. I don't know of anyone who has successfully gotten Airbnb to deactivate IB. Some hosts have reported that they've deactivated their listing and created a new one hopefully to avoid the IB dragnet. It's a lot of work but perhaps the new listing won't have IB as a default.

I would actually like a bit of a discussion with a complete stranger before I accept them.
This seems relatively new because I don't recall it happening at the start of the year. It was always manual pre-approval & seems to have become only "instant booking" overnight.
Someone said it's default for newer Airbnb hosts. Does newer mean 2016?
Haven't located methods of disabling IB yet but then I hate using Airbnb's website so I don't like going near it.
