Extra guest charge

My listings specifies that any extra guest after 8 guests has to pay an extra fee, we allow 2 more guest, so 10 max.

When  my guests book they can only enter up to 8 guests. The question is, how can they pay for the extra guest or guests?

You have set the max. amount of guests in your listing to 8, so you need to set it to 10. Then the extra fee for guest nr 9 and 10 will be charged automatically if guest enters correct nr of persons in the booking form..
