Guest's charges and when they are held.

My guest asked me what is held at booking. Just deposit it entire stay. I believe entire stay but I want to be certain.

They pay for the entire stay when they book (unless it is a long term stay when diffferent rules apply). They do not pay the security deposit, it is just an agreement to pay up to a certain amount if there is damage (that falls under the security deposit policy)
