How do I change an existing quote?

A quote has been sent but the guests wants to bring more people and has agreed to pay extra, how do I amend the quote so they can pay?

@Jill25  if this is a "quote" as in a special offer which isn't a confirmed booking you can simply cancel the pre-approval and issue a new special offer with the new price and number of people.
