I only book one person at a time because I want to make sure my client is happy. That seem like the best way to do it. Right?

Answers are going to vary by host.  Some people are fine with hosting more than one Airbnb party at a time.  Others prefer only one.  Do what you're comfortable with. If you feel you can only provide the best service when you only have one reservation to worry about, do that.

Hello Arbra,

This looks like a good way specially if you are starting your airbnb listing. dedicating more attention and being aware on every experience each host can bring to you is a way for you to be more confident to have more than one at a time. here in my place, after two years hosting, sometimes i have more than one but just for very short periods and in case of emergency.

It's nice to see if the space and the common areas are enough for all guests feel good and at home.
