I have guests who want to book long term for 7 months. How do they go about to book and be sure that there will be no conflicting bookings?

I am not sure I understand your question. Can the guest not select the dates on your calendar and book it?
Yes they can.but do they have to pay in advance for the full period?

The guest will pay the first month down when they book and then in monthly installments. Airbnb handles all the payments. If the guest has more in depths questions, I would direct them to Airbnb customer service.

I would question why a guest would want to make such a long term booking through Airbnb - it's an expensive way of doing a rental.
What did he tell you about plans for his stay?
Would staying that long confer any tenancy rights for him in your country?
Personally on my longer term rental (minimum let six months), I get a credit check run on my tenants, take a deposit, take up references from their previous landlord and get a reference from their employees. And I have a proper tenancy agreement.
Hope you read the links given to you, @Mariana393 as you will need the information. As you consider this, ask yourself if you want to be a landlord and have a tenant. Are you prepared for long term? Do you have a separate rental agreement? Seven months is a long time if there are problems. It is also a long time in that your listing will be low on the search pages because of the low activity.
