I have been looking into renting my 2 bedroom apartment for a long term rental of a year or more.  I didn't finish setting up the account for this,  but someone just messaged and said they were coming for a couple of days and I don't have a furnished place for a short term rental. I need a renter that can stay for a year lease.

Airbnb is not the correct platform for those wanting to offer year long rentals of an unfurnished place. You should use traditional estate agents or rental sites for this, take up references, credit check, contracts etc.

How were you able to set up a listing with a minimum one year let?

You need to contact Airbnb if you have a confirmed booking (rather than just an inquiry) that you can't accommodate and cancel your listing ASAP.
