Our global rule is to allow check-in on Saturdays only, with a minimum and maximum 7 night stay. Would like to override this restriction for a specific date range: Say, from June 4-7, minimum night stay is 3 and check-in day June 4 (Tuesday).
Can this be done?
Yes, it can be done by creating a ruleset and apply it to specific period. But you must have multicalender available to use the feature.

@Patrick1274 click on your profile photo when logged into airbnb and choose "Account", then click "Settings" and you should have the option to switch on professional hosting tools and the multicalender
