How do I change daily rates to weekly rates on the reservation listing and How do I tell someone that i  only accept weekly Saturday to Saturday rentals during prime time.

In the calendar settings you can set the minimun stay to 7 nights, but I'm not sure how you can specify that the 7 days have to be only Saturday to Saturday.  Maybe you state that in the description of the listing?  And if you post a weekly rate in the Pricing section, someone booking your minimum 7 nights would automatically get the weekly rate.
