I want to unlist my property starting Aug. 1 until further notice due to government regulations.

You can deactivate the listing by yourself:

https://www.airbnb.com/help/article/476/how-do-i-snooze-or-deactivate-my-listing

You can allready block the dates on the calender from 1th of august onwards.

Alternate and more safe:  Set the "booking window" option to "block dates by default" and make the dates to 1 august available manually.
