We're relatively new to Airbnb and still finding our feet.
We're looking to amend the house rules and check in times we originally gave - our question is:
For those guests who have already booked when these original rules and times were in place, do they see the new amended rules/check out times or will they have already been advised of the original rules/times?

@Amanda1713 The guest's reservation details will show the original rules and checkout times that were in place when they booked. These comprise part of the contract they agreed to at the time of booking, so if at all possible, you should honor those terms for these guests rather than the new ones.
If you're unable to honor the original terms/times and it might affect the guest's stay, the done thing would be to notify them and offer a full refund if they decide the booking is no longer suitable.

Do you know how I would know which guests have the original check in/check out times and which booked under the new times/rules, or is it just a case of keeping a note of when these were changed.
