I have hosted on Airbnb for 8 years.
In the summer period, May to end September we have restricted
bookings to 7 days and also stipulated Saturday check in, over that period.
Last week a guest booked a 7 day stay in July from Monday to Monday.
It now turns out that the option to choose check in/check out on my listing has been changed to ...the whole calendar or none. I can no longer apply it to specific periods (basically the high season).
Airbnb Support tell me I could mention check details on the listing, but as I use automatic booking this would lead to confusion for guests and in the worse case cancellations - which is somewhere I don't want to go.
Has any guest found a satisfactory way around this problem?

I got there eventually. By using the calendar dates and found I could apply rules there. Will have to check ordinary calendar now to make sure I'm not blocking anything. (They could do with you in the Support Team, who said there was nothing to be done)!

When you set the check-in restrictions, did you use the Availability tab in the regular calendar or did you set a rule using Professional hosting tools?
I ask because setting check-in days in the regular calendar will apply to the full calendar. If you use pro tools you should be able to apply the rule only to the dates of your choice.

Glad that explains the issue! On the website, click your profile picture and go to Account. Look for Professional Hosting Tools and turn on.
The front page of your calendar will look different now, but if you click the listing name on the calendar you can still see the regular calendar as well. Here's some help:

There's reference to multiple listings, but you can use the multi-calendar and its rule sets for a single listing as well.
After you've set the rule(s), be sure to go to guest view and check whether your listing is bookable the way you intended. The new calendar can take some getting used to, so it's best to double-check everything.

I have found the Pro Host calendar,
but the rule sets don't seem to allow me to have particular dates (high season) where I can restrict check to in Saturday , but allows me to have 'any day' check in for low season.

Yes the rules are difficult. You will have to select all the high season dates on the calendar and make a rule for them that guests can't check in on the other days (tick Sunday to Friday as no check-in days). You can also add a minimum stay to the same rule.
If you apply the rule to high season dates only, it will not affect other dates.
Just double-check your regular calendar as well. You set some restrictions there - remove them so they don't restrict the off season and just let the rule set control the high season.
Check everything by selecting dates in guest view.
