I would like to cancel a booking I made for a place in Italy as the host told me her house is very cold in February (12°)
If I do so, can I be sure to get all my money back, including the airbnb fees? the cancellation policy of the place I booked is flexible.

Very difficult to tell without knowing the cancellation policy for this host. Do you have a link to the listing ? Italy has different cancellation policies to other countries, but I do not know if it applies to all Italian listings.
Renting a place with no heating in winter is pretty ridiculous - it should not be listed at all outside the warmer season.

As @Marit-Anne0 said, listings in Italy have different cancellation arrang ments to other countries.
As is shown at the top of the listing, you'll get a full refund, including service fees, if you cancel 24 hours or more before the check in time for the listing, provided you booked after the 18th of October.

Yikes, I guess we take for granted that heating would be provided if outside temperatures are in the 50's. But according this site: http://www.expatfocus.com/expatriate-italy-heating-airco Most peopel use portable heaters, I can understand that in an AirBnB, they probably would not want the risk associated with having unfamiliar people using a portable heater.
The host did disclose in the listing that they do not provide heating. So a guest may incurr cancellation penelties. I guess YMMV
