You can create a custom rule for certain periods or dates under section "availibility", "lenght of trip", "add custom rule etc.." and set the "minimum stay" at the value you wish. Please note such rule only affects bookings starting in that custom period, not starting (just) before it. In other words: the check-in date allways determines the value for "minimum amount of nights" set.
