How will I know if a guest that made a booking with me  is coming to stay.

Because that's why the guest made the booking for !

You can sent the guest a welcome message and, for example, ask about expected time of arrival.

Unless guest is cancelling the booking, you should be prepared  he/she will arrive on the check-in date.

Unfortunately some guests do not communicate very well... so try again.
