I have unfortunately cancelled a reservation. Now the dates that guest had requested appear blocked for all guests.
How can i put them back on available?

You cannot put them back, because this is one of the penalties applied on hosts due to host cancellation.
But, did you cancel the booking because you needed to do it or the guest sent you a request for host cancellation?

My guest wanted to change her reservation dates. So I read in the Help section that the host had to cancel the reservation and for the reason why click on the section about changing dates, periods etc. I was using the Air BnB App for IPAD and this option did not appear. It seems as if I have inadvertently cancelled the reservation when all I wanted to do was edit it. I want to honor the guest's date request and now my calander is blocked. She is very nervous as they have all bought air tickets. Help!
